This is a cookbook about a restaurant, but it’s not a restaurant cookbook. It’s written by three people – a chef and two ambitious but unprofessional home cooks who happen to be the owners of the restaurant.

So far, we have brought you into our restaurant, taken you through its history, its people and why we love working here. Now for the recipes, which make up the more substantial part of this book and have been written by Shaun.

The recipes here are all the product of the creativity and passion that have made Shaun one of London’s most respected chefs – but they’re not necessarily ‘complete’ dishes such as you would find on our restaurant menu. Professional kitchens have more space, more time and more people than an amateur cook could ever dream of.
