I try wherever possible to buy my meat and poultry directly from the farmer who produces it, or I use specialist providores who search far and wide for the finest breeders and growers. I like to buy free-range animals that have been bred by passionate farmers in humane conditions, with an emphasis on breeds that are grown for their flavour and eating qualities rather than how quickly or cost-efficiently they grow. The best meat will yield the best results.
