The spatula helps you turn over large quantities of food quickly, and the slotted spoon lets you scoop foods like crispy shallots out of hot oil before they burn. When you cook noodle dishes, keep one tool in each hand to help you keep the noodles moving. Even better for this job is a set of V-shaped, spring-mounted stainless steel tongs, one long and the other very long. They come in handy for serving as well as cooking.
