Fish, Wings & Tings is as much about the culture of cooking as the food itself – it is impossible not to relax into eating here. Owner Brian Danclair has been drawn to feeding people since childhood fish cookouts by the sea in Trinidad. By 19, he had moved to Washington DC and was managing a classic French restaurant. He graduated onto cooking in the south of France in his twenties before coming to the UK for love.
When Brian came to London he was surprised how ‘back a yard’ or homely the Caribbean restaurants were. He opened his first place above the Dogstar pub on Coldharbour Lane in 2005, wanting to cook Caribbean food with French flair. He made the move to Brixton Village in May 2012 and brought authentic Creole food to the market, mixing Jamaican, Bajan, Grenadian and Guyanese influences with Trini food. There’s a little Portuguese in there and a dash of South American – his famous hot sauces are named after his Venezuelan grandmother.
