Pillau talk! Imagine Britain without chips, France without garlic, Poland without cabbage, Ant without Dec. Get the picture? Needless to say, rice is one of the main building blocks of Indian food (and just about every other Asian cuisine).

Each culture has its own preference in terms of the variety of rice and its preparation. There are many different types of rice in India, but here I have used only basmati, since it is widely available and is virtually foolproof. Traditionally, basmati was only used for briyanis and on special occasions, because it was too expensive for daily use. Now that it’s cultivated throughout Asia, and in the US, its use is widespread. The Moguls, who came from Persia, brought with them traditional rice dishes that were incorporated into Indian cuisine, such as biryanis and pillaus. Incidentally, rice flour is used to make breads, sweet dishes and snacks.
