Bulghur Wheat

  • 1 cup bulghur = 2 cups soaked
  • 1 cup bulghur to 2 cups water
Rinse the bulghur. Place in a large bowl and pour over boiling water. Cover and leave to sit for 20-40 minutes. Bulghur wheat is available in various grain sizes, so soaking time will vary. It needs to be soft but not mushy. Squeeze out extra moisture with a clean tea towel and fluff up with a fork.
