Toasting Nuts and Seeds

Toasting intensifies flavour. Try either of these ways: in a small dry frying pan over a high heat, toast the nuts or seeds. Keep them moving until some of the following things happen: a fragrant smell, popping sounds or a golden colour. This happens very quickly. You can also toast nuts and seeds in the oven set at a medium heat (160°C) for around 5 minutes. Keep an eye on them.
