The Water-wolf, the Lord of the Stream, the Freshwater Shark - such are the names justly given to the pike, a savage and voracious fish, dangerous to fishermen and its own kind alike, but pardoned for all its faults by the] gourmet because it can be transmuted into the perfection of quenelles de brochet. Unlike so many freshwater fish, its flesh is very delicate when young and makes excellent eating, but beware of the bones, for they are sharp and so hard in texture that they do not dissolve in the stomach.
