To Prepare Asparagus

Wash the stalks thoroughly and, if sandy, scrub them gently with a vegetable brush. If there are some isolated leaf points below the head, remove them. To remove woody base, break stalks instead of cutting them. You will find that the stalk snaps off easily at the point where the tender part begins. Put the stalks in cold water as you clean and trim them.
