To Prepare Leeks

While leeks may be one of the mildest flavoured members of the onion family, they are also apt to be one of the earthiest when freshly picked. To ensure that leeks are not gritty with sand or soil, trim off the roots and cut off the tops, leaving 1 to 3 inches of the green portion. Halve the leeks, leaving the halves attached at the root end. Wash thoroughly.
