Prepare egg pasta as opposite. Cut into 3 by 4 inch rectangles. Dry for 1 hour. Drop into boiling water for 5 minutes. Remove and drop immediately into cold water. Drain and spread on a clean cloth to dry. Fill as desired and bake until stuffing is cooked through. Serve with tomato sauce and freshly grated Parmesan cheese.
