Lift pudding out of the saucepan and allow it to stand for a minute or two, because the first steam escaping from the pudding is apt to crack it if unprotected by the bowl or cloth in which it has been cooked. Remove the cloth or paper from the top; take hold of the bowl or mould with a cloth and shake it gently to ensure that the pudding is coming away quite freely from the sides. Turn it out on a hot serving dish and remove the mould carefully.
When pudding is boiled in a cloth, lift it on to a colander or sieve and let it drain for a minute or two. Then untie the string, remove cloth gently from the sides of the pudding, turn it out on a hot serving dish and pull the cloth carefully away.
