Availability and Selection

Harvesting times depend on the particular variety, but some fresh purple or yellow potatoes will be available year-round. Select firm potatoes with taut skin free of blemishes or sprouts. On occasion, a potato grower at the farmers’ market I frequent has Peruvian potatoes. When I don’t find them, I substitute small Yukon Gold potatoes. I have found frozen whole Peruvian yellow potatoes in Latin American markets.
