Store potatoes in a cool, dark spot with good air circulation. Protect them from both daylight and artificial light, which can cause them to develop green patches (evidence of the toxic compound solanine), and from frost. They will keep for up to a month. During the cool months of the year, I store potatoes in my basement, in a loose brown-paper sack with the top crumpled over but not tightly sealed. In the warmer months, I buy only what I need for a recipe and use them right away.
