Arrowhead is typically planted in the spring and harvested about 6 months later, making its appearance in Chinese and Japanese markets during the winter, especially around their respective New Year’s celebrations. Look for these bulb-shaped, ivory-colored tubers in the produce section, kept dry and away from the misting machines. They should have a small sprout at the top and feel firm and solid, except for the very center of the base, which will give a little when pressed. Buy larger ones, which will be easier to peel.
