If beets are purchased with their greens attached, cut the greens off, leaving 1 inch/2.5 centimeters of the stem attached to the root, and store the greens separately. If left attached, the greens draw moisture, flavor, and nutrients from the roots, ultimately leaving the roots shriveled and sad. Store unwashed and untrimmed beets in the refrigerator or in a cool, humid place for up to 4 weeks, or longer if they remain firm and appear fresh. Unwashed greens will keep in the refrigerator for a few days. Loosely wrap them in paper towels to wick moisture, and then place them in a perforated plastic bag.
