Being more of a cook than a gardener, I wasn’t familiar with the different cultivars of celery root until I began researching them. Every one of my avid gardener friends like to grow it, calling it an unfussy plant, happy in almost any conditions, and perfectly content to stay in the ground in winter. Here are four favored cultivars.

Brilliant A good keeper that yields a smooth bulb with white flesh that does not readily discolor.

Giant Prague Produces a 5-inch/12-centimeter round, crisp, white celery-flavored root that stores well.
