Crosnes are small, creamy white tubers at the ends of underground stems. They are about 2 inches/5 centimeters long and ¾ inch/2.5 centimeters in diameter, and often smaller, and they look like a spiral seashell with bulging ridges. Imagine a very tiny Michelin man with ridged, chiseled muscles! Crosnes are deliciously juicy, crunchy, and crisp, with a delicate nutty flavor slightly reminiscent of new potatoes or water chestnuts.
