These tubers are carbohydrate rich and low in calories (32 calories per 3½-ounce/100-gram serving), with high levels of potassium and phosphorus. They are a significant source of iron, thiamine, and vitamin C and are high in dietary fiber, which helps reduce blood cholesterol and lessens the incidence of colon cancer. They are also a good potato substitute for diabetics and those on a low-carb diet.
