Three species of the genus Pachyrhizus have been domesticated, but you will only see the best known and most widely cultivated Mexican species, P. erosus, sold in supermarkets and in Latin American and Asian markets. For clarity and completeness, it is interesting to note the two other species: P. ahipa, or Andean yam bean, and P. tuberosus, or Amazonian yam bean.
