Typically harvested in late fall and in winter, parsley root is hard to find in many locales. But if you see it—check your farmers’ market—buy it. It is delicious and guaranteed to be a root you will grow to like. Look for pale, creamy beige roots that are firm and uniformly sized. The roots resemble small parsnips, but you will know them when you see their leaves, which look like curly-leaf parsley leaves.
