Potatoes high in starch yield a mealy, granular texture when cooked. They are lower in sugar and moisture than low-starch potatoes, perfect for deep-frying, producing crisp, golden French fries. Ideal for baking: the flesh cooks up fluffy and light; their lack of moisture makes them ideal for mashed potatoes.
