With similar nutritional profiles, salsify and scorzonera are a boon to dieters with only about 70 calories in a 3½-ounce/100-gram serving. The roots are rich in dietary fiber and are a good source of vitamin C, B6, calcium, and potassium. Salsify contains inulin, a complex carbohydrate that yields fructose, rather than glucose, when digested, making the root a good choice for diabetics.
