Sweet potatoes are considered a superfood and a beta-carotene powerhouse, with 23 milligrams in 1 cup/290 g of the cooked root. Indeed, they have more beta-carotene than any other vegetable, including carrots. But they shine in other categories, too, scoring at the top of the class in vitamins A and C, folate, iron, copper, calcium, and fiber, according to a study of fifty-eight vegetables by the Center for Science in the Public Interest.
