Wrap fresh wasabi in damp paper towels, place in a loosely sealed plastic bag, and refrigerate. Rinse the wasabi in cold water every few days, trim any soft spots, and replace the paper towels. Fresh wasabi will keep for 2 or 3 weeks. Do not remove it from the refrigerator until just before use. You can also freeze whole fresh roots for up to 6 months. Do not thaw before grating.
