Refrigerate unwashed, unpeeled water chestnuts in a brown-paper sack for up to 1 week. I have seen recipes that suggest peeling water chestnuts 1 to 2 days in advance and then refrigerating them in a covered jar filled with water. I find they taste waterlogged, however, and their taste is diminished. It works best to peel them right before, or at most a few hours before, you plan to use them.
