Lesser Asiatic Yam or Potato Yam Dióscorea esculenta This was one of the first yam species cultivated, but it is seldom found today outside of its native Southeast Asia and Pacific Islands. The flesh is soft with a slightly sweet taste. This is one species that does not store well.
