Look for yams year-round in Asian and Latin American markets, though the availability of some types can be sporadic. Select specimens that are very firm with no soft spots, shriveled skin, cracks, or signs of mold. They should also be evenly shaped to ease peeling. I haven’t noticed a difference in the quality of big versus smaller yams, but they should feel heavy for their size, which indicates that they are moist inside. Sometimes yams are sold wrapped in plastic wrap with the ends trimmed to reveal the flesh. Check the cut ends to make sure they look fresh and moist and are free of any mold around the cut edge of the skin.
