Yuca is available year-round in most supermarkets and in Latin American and Asian markets. It looks like an elongated sweet potato and usually measures 8 to 10 inches/20 to 25 centimeters long and about 1½ inches/4 centimeters in diameter. It has a distinct dark brown, coarse, scaly skin that almost looks like bark. The skin is usually waxed to preserve the root, as it is susceptible to mold. Look for roots that are firm and free of soft spots, cracks, or any signs of mold. The flesh should be pure white or cream colored with no black veins.
