Store the roots in a closed brown-paper bag in a cool, dark spot for up to 10 days. They will soften quickly if left in a plastic bag or refrigerated. Yuca can also be frozen: peel it, cut it into manageable chunks, wrap well, and freeze for up to 2 months. (It is sometimes sold this way in Latin American markets.)
