Apart from those featured in the first and last chapters, of course, all of the salads in the book are designed to be served to 4 people as a main course. Most will also work as starters – just make them smaller, or use the quantities given to feed 6-8 people as a first course.
There will, of course, be some people (like my father) to whom they will be too small as a main course, and some diners may want to know where the meat is (look at the meat chapters) – but then I suppose this book may not be for them. I’ll write a meat book next!
