In the Rocky Mountain area, chamois can be replaced by any mountain goat-type animal that is not protected and can be hunted legally. In other areas, it is best and more than adequately replaced by young lamb, the best being those tiny baby lambs sold around Easter in all Italian neighborhoods. Capretto, the baby goat, can also be substituted and is absolutely delicious. Older goat legs are not recommended, but heavy legs of lamb can be used once the fell has been removed.

To obtain a wild taste from farm-raised animals, one must marinate. The younger and smaller the joint of meat is, the shorter the marination should be. Generally, the century-old marination called en chamois is done with red wine. Serve the same red wine with dinner as you use for the marinade.
