Many Scandinavian cakes are light airy layers spread generously with whipped cream and layered with more whipped cream or custard. Rarely are they topped with frosting but a light dusting with confectioners’ sugar is common. Although some cakes contain baking powder, most of the lightness comes from the air that is beaten into egg whites or whole eggs. For cakes that include fat, it is always butter. A cake is always included on a Coffee Table, delicately flavored with vanilla or almond, and usually covered in luscious whipped cream.
