After a large meal you may find your stamina failing at the pudding stage. A small helping of sorbet can freshen your appetite and allow you to embark on a more substantial dessert with some enthusiasm. This is the only point in a meal where a sorbet course is appropriate, never between fish and meat, for although a sorbet will undoubtedly wake up your tastebuds it also leaves a coating of sugar syrup across the palate which won’t suit anything afterwards other than a dessert.
