Soups, called minestre in Italian and minesre in Sicilian, are the mainstay of Sicilian cooking. They are generally very easy to make, economical, comforting, and delicious. These soups are rich in proteins if made with dried beans, refreshing to the stomach if made with vegetables, and nutritious if made with a chicken or meat broth. Combining pasta with beans, vegetables, or broths makes the dish nutritionally complete.
