Pasta in all of its wonderful varieties is nutritious, filling, and satisfying like no other food The presentation and the fragrance of an elaborate pasta dish will evoke thrills of joy Yet Pasta cu’ l’agghiu e l’uogghiu, in its absolute simplicity and ease of preparation can be truly called fast food, and it is as delicious as any of its more elaborate cousins. Pasta che sardi is a classic dish of Sicilian cuisine with its topping of toasted bread crumbs rather than cheese. Made just with anchovies and toasted bread crumbs its delicious and can be prepared in a flash. Delectable Pasta alia Norma honors the great Bel Canto composer Vincenzo Bellini, who was born in Catania, Sicily, and whose opera Norma gives the dish its name. The Timballo is a truly princely dish rich, fragrant, and delicious recalling one of the many parties given by the prince of Salina in the book II Gattopardo (The Leopard), which became an instant best seller immediately after its publication in 1957. This was the first published of a scholarly Sicilian aristocrat, Giuseppe Tomasi di Lampedusa, who was a brilliant twentieth-century writer, as well as a prince and a gourmet.
