Writing a cookbook,” says my friend Marion Cunningham, “is like cooking an elephant—an inch at a time.” The writing of this book encompasses far more than the three years it took to produce a manuscript. Without my knowledge, it actually began thirty years ago. A large elephant, indeed.

The Simple Art of Perfect Baking is, more than anything, the result of my interaction with many wonderful people—whether in a book, a class or a chef’s kitchen. Their knowledge, inspiration and support helped to evolve the ideas, techniques and recipes captured in the following pages. I take great pleasure in expressing my thanks and gratitude to some of the people who influenced my creativity, learning and growth. I also mention throughout the book other people whose insights on baking have had an influence for adaptation or inspiration. If I have overlooked anyone, I’m sincerely sorry.
