So, what is the paper towel method? It’s as easy as laying a sheet of paper towel between the lid and the insert of the slow cooker. We often use this method in this book for bread and other baked goods. As the condensation collects on the lid, it drips onto the paper towel instead of onto your food. Because let’s be honest, no one wants soggy focaccia! This method has not been approved by slow cooker manufacturers, and it should only be done under close supervision while your food cooks. If you’re not comfortable using this method, recipes should turn out fine without using it but may not have the desired texture in the end.
