Who would have thought that using a large injector to push marinades and other liquids into the center of meat would become a fad, but it seems that everyone is doing it these days. Many competitive smoking teams claim that their special marinade, injected into the meat, is the secret behind their winning streaks. I started experimenting with this only in the last few years, and while I don’t always inject my meat, I have become a huge proponent of this process.
