The actual process of preparing food to be cooked sous vide is very simple:
- Plan your sous vide cooking well ahead of time.
- Buy fresh, high-quality ingredients from reputable suppliers.
- Work clean and neat and use new chopping boards for different food groups.
- Before starting, make sure all foods are cold and vacuum-sealed, removing as much air as possible.
- Cook using your PolyScience immersion circulator, preferably in a covered container.
- Cool using the three-stage cooling method described to store, or finish and serve.
