The actual process of preparing food to be cooked sous vide is very simple:
  • Plan your sous vide cooking well ahead of time.
  • Buy fresh, high-quality ingredients from reputable suppliers.
  • Work clean and neat and use new chopping boards for different food groups.
  • Before starting, make sure all foods are cold and vacuum-sealed, removing as much air as possible.
  • Cook using your PolyScience immersion circulator, preferably in a covered container.
  • Cool using the three-stage cooling method described to store, or finish and serve.
