In Asia, where heating and cooking fuels are scarce, the tradition of quick stir-frying—and subsequent soup making—gave birth to cooking techniques still used today.
Asian soups are easy to make in only a few minutes because the meat is cut into very thin strips that cook very quickly. Sometimes the meat is marinated ahead of time and the soup is prepared at the last minute by simmering the meat for a few seconds in water or broth. For many of the best-known Asian soups the diners do this themselves.
