Jelly evokes a sense of fun and a reminder of our childhood. I use jellies in the construction of my cakes and desserts to really punch in a flavour. The passionfruit jelly always brings a welcome tang and a real lift. Jellies also add a textural contrast, which is very important to my creations, and they look stunning when used as a garnish. They can also provide a surprise when hidden in a dish.

But what is a jelly? Well, that is explained in Studio Note 5. Essentially jellies are pretty easy to make as long as you obey a few rules. On paper, the following recipes seem to cover a great variety of different types, but if you look closely there are really only a couple of variations in technique. This gives you the freedom to create your own flavour combinations.
