The finish on a cake or dessert after it has been sprayed with a light, delicious mist of liquid chocolate is absolutely stunning. At Sweet Studio we are lucky enough to have a purpose-built room for exactly this job, but of course you don’t need such a luxury if you want to try this technique, and the equipment needed is surprisingly easy to get your hands on.
Most of the dishes in this book have a component that has been sprayed in chocolate; the beading and textured finish are down to the liquid chocolate cooling in the air and on contact with the cold surface of the mousse.
