Another way I infuse a different flavour into my desserts is by using a simple smoking technique. White chocolate is particularly receptive to this method as it really takes on the flavour of your smoking chips.

This technique is essential in our Smoked White Chocolate, Coffee, Aniseed and Lemon, and the chips are further infused with lemon and aniseed to enhance and complement the flavour profile.

Many specialist food equipment suppliers now have hand-held smoking guns, which are what I use at Sweet Studio. These are particularly effective as they produce the smoke without heat, which is important, as we do not want to apply unnecessary heat to our chocolate. I use a 100% Chef brand of smoking gun that I bought online; there are also a number of other brands available via the web.
