I use specific quantities of ingredients in all of the recipes, so accurate measurements must be taken. I recommend the use of digital scales, which climb in increments from 1 gram to 5 kilograms. It is also necessary to invest in a set of scales that record increments of 0.1 gram; these can be found online.

At Sweet Studio I use a high-speed heat-assisted blender called a Thermomix for a lot of my recipes. This piece of equipment is highly recommended, but it is not essential as I have developed these recipes to work without it.
