Khadija, Azziz’ beautiful new wife, is the latest addition to the household. She is young, virtually untrained, knows little about cooking. She has yet barely learned the rudiments of washing and ironing, her daily task. Azziz has to help her with the cleaning of the house but she is always smiling, and I am happy for her. And happy, too, that she is untrained and I can teach her Moroccan cooking. She will be a willing pupil. I can see she is already interested. As is Azziz. They will cook together in harmony. All the recipes in this book. Neither can read, of course, neither French nor English. (I’m not even sure they can read Arabic.) But they will learn as I teach them – and show them – and correct their tastes. This is after all what I do best.
