This chapter is especially for all the people who have supported Taste Tibet over the years. Here, at last, we reveal the secrets behind your favourite Himalayan dishes, including Yeshi’s legendary dal and our much-loved chicken curry, the festivalgoer’s cure-all, and now – officially – the Taste Tibet Famous Chicken Curry.

These dishes came into being a few months into the life of Taste Tibet. When we first started our stall in 2014, selling only momos, Yeshi was a one-man band. We had a four-month-old and a two-year-old in the house, and my hands were too full for me to be any help in the kitchen. Poor Yeshi would stay up late into the night making dough and wrapping momos.
