Thomas and Alistair Wilson set up the Isle of Skye Distillery, producing Misty Isle Gin, in early February 2017, to great acclaim. All their gin is made locally in Portree, using the crystal-clear spring waters from the Storr Loch, just over a mile or so from the distillery. They first launched as Isle of Skye gin and are the first stills producing gin on Skye!
There are eleven botanicals used in Misty Isle: juniper, coriander, black cubeb, grains of paradise, angelica root, cassia bark, liquorice root, lemon, lemon verbena and orris root; and the eleventh is a secret island ingredient that only the two brothers know. All Alistair would tell me when I tried to push him on the elusive botanical, is that it is foraged on Skye and dried to a crisp, then mixed in with the orris root. The gin is distilled in the three 100-litre traditional copper pot stills, then the baskets of botanicals are introduced to add the unique flavour profile.
