  • About

Khachapuri is undoubtedly the most iconic Georgian recipe. The flat, cheese-filled breads come in many versions and are served at almost every meal. They also easily make the transition from the formal dinner table to snack or casual food. Many small bakeries in Tbilisi and around the country feature the filled breads that make delicious, inexpensive and satisfying meal options. At a supra, khachapuri is served hot and arrives with the other hot dishes after the meal has begun.

Several regions have their own khachapuri, varying from the Imeretian (cheese inside) to other styles with added cheese on top or potato or hard-boiled eggs inside. For a full list of khachapuri and filled bread recipes in this book.
