Vincent Julien was the first to bring the culture of naturally sparkling wines – called pét nat or pétillant naturel – from France to Georgia, and it’s catching on. Several Georgian winemakers have followed suit. “These wines are made with the méthode ancestrale long used in the French countryside to make sparkling wines without added sugars or other alcohol,” he says. Vincent also wanted to avoid using sulphites.
